Glories Sweet Potato Chips
Peeled and sliced potatoes are placed into a large kettle. The kettle cooker looks essentially like an enormous stainless steel rectangular box containing heated oil. The appropriate cooking time is determined by the type of potato and oil used. While frying in the oil, the sliced potatoes are continuously stirred to insure that all of the potato chips are cooked evenly. After the cooking process is completed, the potato chips are carried onto a conveyor belt to cool and to be transported to the seasoning station prior to being packaged.
