Some snacks, such as our Veggie Stix and Veggie Chips, are formed in a process similar to the process used to make pasta. Dough is produced, cut into specific shapes and dried. These dough “pellets” still contain a small amount of water following the drying process. Once the pellets have been prepared, they are dropped into a hot oil bath for only about 15 seconds. While in the oil bath, the remaining water in each pellet flashes into steam, causing the pellet to expand, or pop, into its finished state. The overall process is similar to the popping of popcorn.
